Brown Rice

  • 1 cup instant brown rice

  • 1/2 teaspoon parsley

  • 1/4 teaspoon pepper

  • 1 Tablespoon butter

  • 1/2 teaspoon lemon juice

  • 7 ounces low-sodium chicken broth

  1. Combine instant brown rice, parsley, and pepper in microwave safe dish.

  2. Place butter and lemon juice in a 1 cup measuring cup. Pour chicken broth into measuring cup with butter and lemon juice to measure the 1 cup.

  3. Stir chicken broth mixture into the rice and cover with microwave safe lid.

  4. Heat in microwave until rice is tender and has absorbed all the liquid, about 7 minutes.

  5. Remove and let sit for a few minutes, then serve!
